Deceptive Brownies

Brownies mmmm that chocolatey deliciousness. Who doesn’t love a nice chocolate brownie for dessert? Oh, Heck anytime. What if I told you these brownies are deceptive brownies? They are full of veggie goodness and your family will never know! These brownies fool everyone. You won’t believe how yummy they are or how good they are for you. Just don’t serve them warm– it’s not until they are completely cooled that the spinach flavor disappears. Yes, I said spinach. these brownies are low in calories and saturated fat. They are also packed with 3 grams of fiber and 2 powerful antioxidants. (carrots and spinach)

I was always looking for a healthy snack or dessert that I could feel good about. Then I found this recipe in my favorite cookbook and decided to give it a try. I mean why not? All the other recipes I’ve made using this same cookbook came out amazing. The Italian Turkey Meatloaf and Cauliflower “Mac” n Cheese. Ingredients:

Deceptive Brownies
  • Non-stick cooking spray
  • 3 ounces semi-sweet or bitter-sweet chocolate
  • 1/2 cup carrot puree (or put in a food processor until pureed)
  • 1/2 cup spinach puree (or put in a food processor until pureed)
  • 1/2 cup firmly packed light or dark brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 Tablespoons trans-fat-free soft tub margarine spread
  • 2 teaspoons pure vanilla extract
  • 2 large egg whites
  • 3/4 cup oat flour, or all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Directions:

Preheat oven to 350 degrees Fahrenheit. Coat an 8×8-inch baking pan with cooking spray

Melt chocolate in a double boiler or over a very low flame

In a large bowl, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine, and vanilla. Whisk until smooth and creamy, 1-2 minutes

Whisk in egg whites. Stir in the flour, baking powder, and salt with a wooden spoon.

Pour batter into the pan and bake for 35-40 minutes. Cool Completely! in the pan and cut into 12 squares
